From my understanding, Taming falls under Hunting, and Boats and Seige Weapons was rolled into Carpentry.
You can only master two or three professions in a particular discipline. You can not master a gathering profession and master a processing profession at the same time.
And they said the leveling rate will be close to the character rate. It may take three months or more to maximize a single profession.
