You don't have to run back to Lionhold to sell. You can sell to any of the vendors located at each of the crafting/processing stations around Lionhold (like the vendor right next to the Tanning station that you were using).
You also can get a mount by completing the "Sweat of Your Brow" quest in Lionhold to help you move around faster.
Regarding huntable animals – Grems, Ravens and Spiders can respawn as huntable versions when killed, but bears, wolves and horses have pre-determined spawn locations.
Some more useful tips for you:
There is a storage NPC in every node as well as in Lionhold. You can store items that you don't want to be carrying around, like rare materials. Keep in mind that the storages are not linked. If you store something in Lionhold then go to Winstead, for example, you won't be able to access your Lionhold's storage from there, you will have to run back to Lionhold and grab your stuff and take them back to the node you want to become a citizen of when the time comes, but the Lionhold storage is very useful in the early game.
Also, when your mount dies, you don't lose it forever. The mount goes on a 10-minutes cooldown before you can summon it again. However, if you're carrying multiple mounts, you can still summon your other mount while waiting for your main mount to respawn.
