I think if your a casual player and you do get a free hold it will be the main focus of your game play, and you will end up doing quests and dungeons around the free holds needs
Personally, I feel it comes down to time. With a single character, there will be time to split crafting and adventuring, which I think is where most of your money will come from.
If you are also dealing with alt or two for crafting, then time gets tight for a casual player. They have not talked about skill atrophy which can introduce a new set of problems for alt driven players.
Can they maintain a Freehold?
Sure, since you can hire NPC's to tend the crops, same with in-game Player Family members.
