I would enjoy the change but that's only because I usually play solo. but your point makes a lot of sense because in a world where you want an economy to thrive you need to make people need each other.
I could see having a gathering and processing grand mastery so that a player could source and produce the best leather and perhaps that synergy is behind the change. It does, as you say, eliminate one degree of dependency. I suspect that the one GM system would produce a scarcity hierarchy system where GM gatherers, being perhaps half as few in number and holding a monopoly as the sole producers of high level raw materials, would exert an overbearing influence on prices in the economy.

I've had this discussion a few times since the change. We're still going to need multiple other Gather / Process / Craft. This doesn't change much besides reducing SOME tedium in crafting. This also spreads the desire for people to own a freehold that also wanted to craft because now they can try to own a FREEHOLD for their HIGH end processing AND crafting. All in all we'll see in testing, and I think people are napkin mathing the change.
Imagine trying to make T5 legendary gear. You'll likely need 3 or 4 OTHER crafts / processing to complete an item. So not much is changing with this.

I believe this might help smaller guilds? There's already a reasonable limit to how many people you have in a guild, relying on alliances instead and perks that assist small/medium sized guilds. I play games with ~10 people in a tight-knit group so and I could see this giving us a bit more of an advantage; of course at the cost of external player interaction.
i hate really why we need to have limits in mmorpg?!,first lvl up will be really hard i mean character lvl,also 2 professions per character is not enough,so basicly you need help from guild members if you want something processing or crafting on max lvl professions!
